Having this since i bought it. '13 (back in '15) Veloster currently 112k miles.

I recently put in HKS plugs and the car loves it.

However the on/off to the gas pedal didn't resolve.
Basically, when i drive in stop and go traffic or slow speed, the car either wants to move or doesn't. Kinda like jerking around.
It's not terrible, just annoying.
Also had all sorts of things done to it, new coils, tranny fluid flushed, k/n air filter, braided fuel line.
The problem is still there.
Anyone had similar or any clue what causes it? I'm down to the gas pedal sensor to blame something.

Is it consistent? Can you get a video? Was the proper fluid used and filled properly?

Although it didn't completely take it away, swamping out the MAP sensor to a three pin one (part 39300-84400) did improve some of the fly-by-wire lag in mine. On these cars you go from 600 rpm to 1100 rpm (approximately) with no in-between modulation. Here's a thread on it Map sensor update
Not saying that's what's wrong with your car or that this will fix it, just a suggestion
