This may be a stupid question but if we want to reuse existing tires (only done 2000Ks too new to discard yet) do we have to use 18x7.5 rims and what is this offset number I see in alot of catalogues? I like the look of the red Illusion RS wheels but are only in 18x8.0 I am assuming these would be too wide for the stock tires. On this note anyone know the exact specs on the stock rims, i.e. size, (I assume 18x7.5 from the hyundai specs), offset and stud pattern.

I know we can go to an 18x8 withe stock tyres but I think thats as wide as the tyres will stretch. as far as offset I`m not 100% have heard alot of different numbers thrown around but +42 is the one I have heard the most but as I said I could be wrong on the offset. hope that helps a bit.

Offset is the distance from the hub mounting surface on the wheel to the wheel center line. Positive means the hub is towards the street side off the rim ( most front wheel drive cars).
Thanks for the clarification :) So I assume the wrong offset will rub on either the inside or outside and these spacers I have been reading about are so you can use different offset wheels.

So my next question is if I opted for 18x8 wheels what offset would I need to ensure tires do not rub.

You can use spacers to step out the stock wheels, to fill the arches better. If you give John Russo @ Bob Jane on Pulteney St in the city a call, he should be able to assist with offset, etc - they've got the specs on the VT and he can be trusted to do the right thing.
